Spinach, Veggie and Hummus salad.
I used 1/2 Grilled Red Pepper, 1/2 Grilled Courgette, 1/2 Grilled Aubergine (which I let cool) 3 tspoons (ish) Hummus, Cherry Tomatoes, Chopped Red Onion and lots of Spinach.
It was the perfect filling lunch box and a change from a 'traditional' salad that I usually have, in fact I have had it 3 days in a row now.
I have some other things to post about, but I think Im going to do those tomorrow (or maybe the day after) Hope everybody has had a good day.
